OUR ESTATE
A place, a history, a continuity.
Since 1763, Domaine de Cordis has been rooted in a land shaped by agriculture, time, and the work of living ecosystems.
Today, this heritage continues to inspire and shape the Truffle Concept.
A Real Place, Deeply Rooted in History
Domaine de Cordis is a historic farm in Grignan,
with agricultural roots dating back to the 18th century.
More than a production site,
it is a land shaped by generations.
This heritage is not decorative.
It forms the foundation of a deep understanding
of the soil, the climate,
and natural balances.
Cordis, the Place of the Heart
The name Cordis comes from the Latin cor, cordis, meaning “heart.”
This name appears as early as the 18th century, notably in a lease dated May 31, 1763, referring to the agricultural exploitation of Cordis in the Grignan region.
The heart of the land.
The heart of agricultural work.
The heart of a heritage passed down through generations.
The Estate is not a recent brand.
It is the continuation of a living rural heritage

A Land Cultivated Since Antiquity
The site of Domaine de Cordis is part of one of the oldest inhabited areas of Grignan.
It was already occupied during the Gallo-Roman period (1st–3rd century AD), built around a wine-producing villa and an ancient Roman agricultural estate.
Over the centuries, the Domaine has evolved without interruption, preserving a rare continuity in the use of the land and its relationship with the surrounding landscape.
A Complete Agricultural Estate
With its traditional U-shaped buildings, Domaine de Cordis historically belonged to the category of fully integrated agricultural estates.
For many years, the estate supported multiple activities, including:
-
sheep farming,
-
mulberry cultivation,
-
silkworm farming during the Napoleonic era
This agricultural diversity shaped a deep culture of the land and craftsmanship, which today forms the foundation of the Domaine’s truffle-growing methods.
A Terroir Naturally Suited to Truffle
The Grignan region offers natural conditions particularly favorable to truffle cultivation.
Limestone-rich soils, climate, exposure, and environment create an ideal balance for the expression of black truffle (Tuber melanosporum).
Certified organic for more than twenty years, Domaine de Cordis approaches its terroir not as a static landscape, but as a living ecosystem observed, understood, and carefully supported.
A Dedicated Truffle Estate, Without Compromise
Today, Domaine de Cordis spans:
-
more than 30 hectares of truffle orchards
-
around 15,000 planted oak trees
-
an estate entirely dedicated to truffle cultivation
Since 1999, one clear direction has guided the Domaine:
to live and produce exclusively around truffle,
without diversification,
and without compromise on quality.
This complete specialization lies at the heart of the Truffle Concept.
A Controlled and Limited Production
Truffle is a rare product with naturally unpredictable production.
Domaine de Cordis chooses to respect this reality.
This commitment guarantees:
-
consistent quality
-
full traceability
-
a perfect alignment between the product and its culinary use
Here, quality and consistency always take priority over intensification.
Restoring and Passing On
Since 2000, Domaine de Cordis has undergone twelve years of restoration and has received two distinctions from the Fondation du Patrimoine.
But beyond the buildings, it is a spirit that is being passed on.
Today, the Domaine is a place for:
-
exchange
-
communication
-
encounters centered around truffle
Food lovers, chefs, partners, and international visitors come here to discover another vision of truffle deeper, more precise, and truly centered on flavor.
DIDIER
My professional journey has been shaped by three worlds: hospitality, confectionery, and truffle cultivation.
Pursued with passion and enthusiasm, these experiences allowed me to develop a deep sensitivity to flavor, aroma, and the sensory dimensions of gastronomy.
Since 1999, I have been actively developing the Domaine through new cultivation approaches across 30 hectares of organically managed truffle orchards.
Our estate is dedicated to sharing knowledge about the three varieties of truffles we cultivate in the Drôme region: Tuber melanosporum, Tuber aestivum, and Tuber brumale.
After exploring nougat in all its forms — including the creation of nougat cream for frozen desserts — I now pursue the same philosophy with truffle: exploring every possible expression while maintaining uncompromising standards of quality.
I am, above all, a man devoted to taste.
Distinctions :
- Knight of the National Order of Merit
- Commander of the Order of Agricultural Merit (2021)
- Disciple of Escoffier — Culinary Arts (2021)
- Honorary Member of the Brotherhood of the Black Diamond and Gastronomy (since 1992)
A Place at the Heart of the Truffle Concept
Domaine de Cordis is not a backdrop.
It is the starting point.
This is where the Truffle Concept takes shape:
through the land, time, history, and the mastery of living ecosystems.
